Fitting a Header Tank?

Very good idea.

One way to connect your high pipe to a Mk2 Radiator is one of these in place of the filler plug.
Chrome plated. Connects to 15mm tubing with compression fitting
You may need to cut the underbonnet pad and use a packing washer [WF550] so it sits right but it does screw straight in and will present the highest point in the system to the header tank plumbing.
